    Rhubarb (Rheum spp.)

    Species in this genus contain large amounts oxalic acid, and are toxic if consumed regardless of preparation. They are also thought to contain yet unidentified toxic glycosides. However, some varieties of rhubarb have been cultivated for many generations for the tart stalks they produce which contain large amounts of healthy vitamins, minerals, and nutrients.
