    This climbing hyacinth bean produces large amounts of light purple flowers that mature into flat purple-red bean pods. Lablab is widely cultivated around the world as an important food crop, though the beans require thoroughly blanching to remove potentially toxic glycosides.

    Edible (flowers, leaves, roots, seeds, seedpods)

    Flowers - can be steamed or eaten raw.

    Leaves - cooked, used like spinach

    Root - boiled or baked

    Seeds - a mild flavor and high in protein, used like soybeans, often fermented or used for tofu.

    Seedpods - immature tender seeds and pods can be eaten raw or cooked, used like green beans.
