    Also known as scorzobianca or spanish oyster plant, 'white salsify' is a popular root vegetable in Europe that has only recently gained popularity in the states. The entire plant is edible. Young roots are excellent raw while larger roots are typically cooked. Shoots can be used like asparagus. As the common name suggests, it has a mild flavor resembling oysters. Prefers cooler conditions.
